Assembling and platting

Ingredients You need:
Quail whole 1 No+
Ginger 3 grms
Curd(Thick) 15 grms
Garlic 5 grms
Yellow chilli powder 5 grms
Garam Masala 2 grms
Turmeric powder 2 grms
Kasuri Methi Powder 2 grms
Mustard oil 10 ML
Lemon 1 No
Roasted chana powder 5 grms
Salt To test

For Aloo Chokha

Potato 50 grms
Onion 15 grms
Red Chilli whole 2 Pic
Coriander Whole 2 grms
Cumin Whole 2 grms
Mustard oil 10 ML
Salt To taste
For Garnish
Quail Egg 1 no
French Beans 15 grms
Cherry tomato 1 no
Pickle Baby Onion Rings 2 no
Coriander Leaf 1 Sprig
Papaya pickle (sweet) 2 grms
Method of procedure:
At first, marinate the quail with ginger-garlic paste, lemon juice and yellow chilli powder.
After, one hour ,make the second marinade using hung curd a, yellow chilli powder, turmeric ,garammasala, kasuri methi mustard oil and salt. Marinate the quail for at least 4 hours.
Cooked in a  clay oven and once it is ready to keep aside. Do not forget to baste the quail with clarified butter while roasting.
For aloo chokha, temper the mustard oil with whole spices and add mashed potatoes.
Season with salt and keep aside.
For beans, saute it in oil and season with salt.
For presentation, we have to make a base of aloo chokha and sauted French beans.
Garnish with 2 minutes boiled quail egg cut in to half, cherry tomato cut in half, papaya pickle , onion rings and fresh coriander leaves.

Serve Hot.
